White beans with carrot vinaigrette

It is still hot but we continue to propose dishes in which legumes are the protagonists. Today, yes, very cool: some white beans with carrot vinaigrette.

The bean I have cooked them in the pressure cooker but, if you do not have time or do not want to complicate, you can use already cooked, canned beans.

If you choose to cook them yourself, a tip: use the cooking water to make the vinaigrette, replacing it with the water that you put in the ingredients.

A good way to have legumes on the hottest days: white beans (cold) with a vinaigrette of carrots, onion and hard-boiled egg.

Ingredients

• 120 g carrot
• 70 g onion
• A splash of lemon juice
• 60 g of extra virgin olive oil
• 150 g of water
• A pinch of salt
• Dried oregano
• 2 hard-boiled eggs
• 10g white wine vinegar
• 900 g of cooked white beans

Preparation

1. We put the carrot and lemon in the glass. We program 2 seconds, speed 5. We take out and reserve in a bowl.

2. We put the onion and re-program 2 seconds, speed 5. We take out and reserve next to the carrot.

3. We put the boiled egg in the glass and crush it with a quick turbo hit. We take out and reserve in the same container as before.

4. We put the oil, water, vinegar and salt in the glass. We program 10 seconds, speed 3.

5. We pour the liquid into the bowl where we have been putting the crushed ingredients. We mix everything with a spoon. If we see that it is too thick we can add a little more water.

Notes

If we cook the beans ourselves, instead of water we can add bean cooking water.[br]You can increase or reduce the amount of vinegar (and other ingredients) depending on your preferences.
