In our collection of cold creams, you could not miss this vegan melon vichyssoise. A very fruity and diuretic recipe, made without dairy and with a light and creamy texture.
This recipe is ideal for take advantage of a melon that is not as sweet as you expected. So you can easily get it out and without it ending up spoiling in the fridge.
Also, it can be done with any type of melon. In our case we made it with Piel de Sapo melon but we have also tried it with galia and it is very tasty. We have yet to use the cantaloupe and I will tell you about it.

It is a cream especially recommended for summer months which is when the melon is at its best. So we take advantage of its sweet taste.
Also you can take it so much cold as hot. You choose if you want to drink it freshly made or wait for it to cool down and drink it very fresh. The choice only depends on you because the cream is just as rich.
As I mentioned before, this cream does not carry any type of dairy. But don't worry because it is as creamy as traditional vichyssoise.
To achieve this we have used potato, which provides a very good silky sensation. And of course, whole almond butter for the perfect hint of creaminess.
La whole grain almond butter you can easily do at home. It is a real joy because it keeps very well in the fridge and serves as a base for make other recipes and also to prepare delicious smoothies.
You can substitute this butter for butter from any other dried fruit. We want to try with peanut butter, it will give it a different and very interesting flavor.
This cream keeps well up to 3 days in the fridge. You already know that it is best to follow these 3 tricks:
- It must be well refrigerated.
- You have to respect the cold chain, that is, do not leave it out for too long, only the minutes necessary to serve and then put it back.
- The container has to be attached to the volume so that there is not much air. This way you avoid oxidation and that it gets bad. It is interesting to change the container as it is consumed.
