Tiger nut milk shake

We spend the summer in a wonderful town in Valencia and since we arrived there is something that cannot be missing in the fridge and it is a good Valencian tiger nut horchata. It's a drink delicious and very refreshing It takes very cold and accompanied by some typical rolls called "fartons".

This summer I discovered that with Thermomixยฎ it can be done at home naturally and without preservatives or artificial colors. Only real tigernuts, water, sugar, cinnamon and lemon.

As it does not contain preservatives, the homemade tigernut horchata is not easy to preserve because it can turn sour. So, if you have leftovers and you are not going to consume it in the following days, the best thing is freeze it and take it out a few hours before serving. It will be delicious and just as refreshing as if it were freshly made.

      You have to strain it with a very fine cloth or strainer, I have a little bag that I made with sheer fabric and it works great, you can also use a gauze of these that they sell in the pharmacy, the size of a napkin so you can handle it and squeeze well

          If you want a more intense flavor, add less water. For me, the ideal ratio is 1 part of tigernut per 4 of water, that is, in this recipe there would be 250 g of tigernut per 1 liter of water.

    I did not add the lemon and cinnamon, I changed the sugar for fructose and Agave syrup.
