Stuffed eggs

This is one of my husband's favorite dishes and I usually do it during the season. good weather. Although it is true, that almost the summer had passed and I had not prepared this recipe.

A couple of weekends ago my parents came to eat and I had thought about the second course, but it was during those days that you are somewhat "thick" and I could not think of any simple and rich dish at once. I commented with my oldest daughter that I didn't know what to do to eat and she quickly said: "Mommy, eggs !! ..." She was not referring to this dish, but to fried eggs, which drive her crazy, but she gave me the idea of ​​this one. recipe and I said: “you will see how delicious I am going to prepare the eggs this time".

These eggs are prepared in a short time and the good thing about this dish is that we can prepare it in advance. They are one of those recipes that get us out of a hurry with a visit, because you have them made first thing in the morning and when the visit arrives you have everything ready, we just have to go to the fridge and straight to the table.

When cooking the eggs in the basket, I add a splash of vinegar, as it is a trick so that the eggs do not break when cooking.

Delicious recipe with eggs that we can make in advance.

Ingredients

• 6 large eggs
• 800 g of water
• A splash of vinegar
• 2 small cans of tuna
• 1 small can of olives (I put them green pitted)
• 1 small can of bell pepper (we make small strips to decorate)
• 4 tablespoons mayonnaise
• julienned chopped lettuce to decorate (see preparation here)

Preparation

1. We place the eggs in the basket and reserve.

2. We put the water in the glass of the thermomix and put the basket inside. We program 20 minutes, varoma temperature, speed 2.

3. At the end of the time, we remove the basket with the help of the spatula and cool the eggs in cold water.

4. With a clean glass, we chop the lettuce by following this trick. 

5. We peel the eggs and cut them in half lengthwise. We separate the yolks, put them in the clean and dry glass and grate them 2 seconds, speed 3.

   We take out of the glass a couple of tablespoons of grated yolk to decorate later and reserve.

6. Add to the glass together with the grated yolk, the tuna, and the mayonnaise. We program 3 seconds, speed 3. We fill each part of the egg with this mixture.

7. We put drained and dry lettuce in a source to decorate and we place around each egg with the filling. Sprinkle a couple of tablespoons of grated yolk on top and put an olive on top of each egg surrounded by a strip of bell pepper, as if it were a scarf, and so we have a great dish.

8. They should be taken very cool. If we have leftover filling, we can take it on toasted bread as canapés.
