Reindeer-shaped cookies

1. We make the cookie dough: in our glass we put the 145g of sugar and we are going to pulverize it, programming 10 seconds at speed 7. Add the 180g of softened butter and mix everything together for 10 seconds at speed 3,5

2. Add the remaining ingredients: 125g almond flour, 235g wheat flour, two egg yolks, a level teaspoon of ground cinnamon, a teaspoon of lemon zest, and a quarter teaspoon of salt. Knead the dough for 3 minutes at kneading speed.

3. If we observe that the mixture has not been done well, we turn the dough with the spatula and re-program during another minute at kneading speedWe take the dough out of the glass and put it in a bowl to cool for 30 minutes in the refrigerator.

4. Once the dough has cooled, roll it out on a floured surface. It should be a little over 1 cm thick so the cookies turn out plump. Using the same chocolate you'll be using, press it into the cookie to create an indentation. Preheat the oven to 200°C (390°F) with the top and bottom heating elements on.

5. We place the cookies on a baking tray and bake them for 10 to 12 minutes.

6. Once baked, let them cool. In a glass, put the 20g of baking chocolate and microwave it to melt. Do this in 30-second intervals, stirring with a spoon after each interval to ensure the chocolate dissolves completely.

7. Using a toothpick, we'll start placing the pieces to form the reindeer's structure. We'll add a little chocolate to the base of the cookie and then place the chocolate on top. We'll also add a little chocolate to position the eyes and the red candy.

8. We cut the pretzel in half and glued it together with a little chocolate. We let all the glued pieces dry completely, and then we can enjoy these cute reindeer.
