Have you seen the photo? Red cabbage soup is very curious, don't you think? It is made with white beans and various vegetables, including the Lombard, which gives such beautiful tones to the plate. And with panCourse.

I like how it looks when brought to the table, no one would say that we have made it in Thermomix! If it is to be taken as a family, well, in a large container, you can present it without any problem. Another option is to bake it in clay pots individual or in the pots that are now so fashionable.

Original soup made with vegetables, white beans and bread that is baked with grated cheese. Pretty, rich and perfect for the fall and winter months.

Ingredients

For soup:

  • 70 g of onion in pieces
  • 2 peeled garlic cloves
  • 30 g of extra virgin olive oil
  • 240 of cooked white beans (can be canned, weight once drained)
  • 130 g diced carrot
  • 230 g of diced natural tomato
  • 225 g red cabbage, chopped
  • Fresh oregano (or dry, nor do we have fresh)
  • 800 g of vegetable broth
  • Sal Island
  • Pepper

Plus:

  • Grated parmesan
  • A dash of extra virgin olive oil
  • A few slices of bread for the base

Preparation

  1. We put the onion and garlic in the glass. We shred programming 5 seconds, speed 7. We lower with the spatula what has remained on the walls of the glass.

  2. Add 30 g of olive oil and program 3 minutes, 100º, speed 1.

  3. Add 100 g of beans (eye, 100g, not all), and program 20 seconds, speed 6.

  4. Now add the chopped carrot, tomato, red cabbage, part of the oregano and the broth. We program 25 minutes, 100º, left turn, spoon speed.

  5. After that time we add the rest of the beans, add salt and pepper (whatever we consider necessary) and program 8 minutes, 100º, left turn, spoon speed.

  6. We put a little oil in our oven-safe container (it can be made of clay, pyrex ...).

  7. We distribute the bread slices at its base. We cast the previous preparation on it. Cover with the grated Parmesan and some oregano leaves.

  8. Gratin for approximately 10 minutes, until the cheese is browned.

  9. We serve hot.
