Red beans with Mexican flavor

Today we are going to Travel to Mexico! First of all, I want to clarify that it is not a typical dish of the country, but I have tried to give a little Mexican flavor to a red bean stew that they did in my family and that was accompanied with rice. It is tasty and delicious !! Really a success and a success ... everyone has repeated!

We will prepare a stew of beans or red beans with vegetables and to the broth we will add a touch of Mexican spices and mole. Of course, a very very interesting flavor. In addition, we will accompany you rice White and pickled chives. A complete and very nutritious dish.

We are going to use canned red beans to speed up the process. However, if you want to cook your own beans (as I have done) in a great express pot or even in the Thermomix, leaving them to simmer for about 60 minutes, better than better !!

Can you freeze them in tuppers to take another day, so it will be worth the effort?

      Hello JuanMari because you can find it in large stores, in the international cuisine section. It is not excessively expensive and spreads a lot. It is an elongated pot with a yellow lid and the mole is a very dark brown paste. Lucky!! And if not, for sure you can also buy it online. I, in particular, have bought it at Alcampo and Carrefour.
