I had never tried ossobuco and I had always been told that it was a very juicy meat, very rich in flavor, cheap and easy to make. The other day they had it on sale in my butcher shop so I took a tray to make the weekend and thus prepare this ossobuco in sauce on a bed of straw potatoes.
The ossobuco is typical of Italian cuisine and is the part of the veal shank but with a cross cut and presented in thick slices with the bone. It is a fantastic piece to have it stewed.
I love meat stews, do you remember the Lamb stew? Delicious. It's fantastic because you leave them cooking in our thermomix and you can dedicate yourself to doing other things.
In addition, this dish that I present to you today is one of the typical ones that from one day to the next is better, so what is left over, I recommend that you cut it into small pieces and keep it in a tupper to take to work or to take two or three days later. So you only have to fry the potatoes as you like the most or accompany it with rice o mashed potatoes o cooked potatoes. I love the potato straws, they are my favorites by far. For those who do not know them, they are very easy to do. First we peel the potatoes and cut thin slices. Then we pile up several slices and cut very very thin strips. Then we put them in strong oil and in 5 minutes they will be ready. You will see how when you are frying them they are hooked to each other and in the end you have a lot of tangled potatoes. That is, you are not going to be able to take them out one at a time.
