Orange muffins with olive oil and honey

Making homemade muffins is very simple, you just have to keep two tricks in mind: let the dough rest for at least 30 minutes before baking them and never ever open the oven door until 15 minutes have passed. • Orange: in this case we have chosen to use orange, because for my taste it combines perfectly with olive oil and honey, but you can also use lemon and it would be phenomenal. The key is to use the orange zest to prepare a flavored icing sugar. That will greatly enhance Flavor and smell of our cupcakes.
• Olive oil: a key and basic ingredient if we want our cupcakes to have that home flavor, and "to town". Also, using olive oil instead of butter in our pastry recipes will make us have a much healthier product. Honey, in general terms, sweetens more than sugar, so if, for example, the original recipe uses 1 cup of sugar, we will use 2/3 of the cup of honey. Ingredients

• the skin of an orange
• 100g sugar (plus a bit more for dusting afterwards)
• 100 g honey
• 250 g of Arbequina extra virgin olive oil
• 250g milk
• 3 eggs
• 375 g of wheat flour
• 1 sachet of chemical yeast (Royal type)
• a pinch of salt

Preparation

1. We weigh the oil in a jug and reserve.

   We also weigh the milk in another jug ​​and reserve.

2. Put the orange peel and sugar in the glass. we program 1 minute, progressive speed 5-10. We lower the remains to the blades.

3. We put the butterfly on the blades and pour the eggs over the flavored sugar that we have just prepared. We program 4 minutes, 37º, speed 2.

4. Time is up, we program again 6 minutes, 37º, speed 2.

5. During the first 3 minutes Add the oil little by little on the lid of our thermomix with the beaker on.

6. During the last 3 minutes We do the same with milk.

7. We remove the butterfly.

   Add the sifted flour, the pinch of salt and the yeast and program 2 minutes, 37º, speed 3.

   If we have time, we let the dough rest for at least 30 min or 1 hour in the fridge or more or less depending on the time we have. To do this, we pour the dough into a container (jug type) and cover it well so that it does not dry out, this will help us to pour it into the individual molds later. If not, a tupperware is fine and we can add it with a small ladle.

    

8. If we don't have time to rest, we can pour it directly from the thermomix glass or pour it into a jug (it's more manageable for me, really).

9. We preheat the oven to 220ºC with heat up and down.

10. While the oven is heating up, pour the dough into cupcake cases into a rigid muffin tin. Fill ¾ parts or a little more of each capsule and sprinkle with sugar the surface of each cupcake.

11. Bake at 200º for 15 or 20 minutes with heat up and down.

    IMPORTANT: do not open the oven before the first 15 minutes.

12. Remove to a wire rack and let them cool. We store in plastic bags (see notes for conservation).

Notes

Y How do we preserve them? We put them in a plastic zip bag and they keep great up to 5 days. If it's very hot like now, better keep them in the fridge so they don't spoil.
