These wonderful mini fish burgers we owe it to Hope Saavedra, which surprised us by its presentation, originality and quality of the recipe, making the hamburger buns dyed with squid ink herself and accompanying the burgers with a fake aioli. !! Delicious mini fish burgers to surprise our guests with an original, colorful and very tasty tapa.

Ingredients
Mini hamburger buns:
250 g of bread flour
125 ml whole milk
25 g unsalted butter at room temperature
25 g of sugar
12 g fresh pressed yeast
a pinch of salt
12 g of squid ink (3 sachets of 4 g each)
Fish burgers:
3 large frozen boneless skinless hake fillets
4 crab sticks
1 egg
1 teaspoon of parsley
½ teaspoon garlic powder

2 tablespoons of breadcrumbs
Flour and egg for coating
Fake aioli sauce:
1 egg
1 large garlic

300 ml extra virgin olive oil

We put the butter, sugar, milk and yeast in the glass and mix 2 minutes, temperature 37º at speed 2. We add the ink and re-program others 2 minutes at the same temperature and speed.
Add half of the flour and mix 5 seconds at speed 5. We add the rest of the flour together with the salt and knead 2 minutes, glass closed, spike speed.
We go to a bowl and cover with film, allowing it to double its volume.
We divide the dough into 8 portions and make balls. We put in the oven tray, on parchment paper and cover with film, leaving about an hour, so that they rise.
We paint the balls with a bit of water and sprinkle with sesame. We put the preheated oven at 180º for 15 minutes. We booked.
Defrost the hake fillets and crumble them by putting them in the glass and programming 4 seconds at speed 4. We booked.
We put the sticks and chop some 6 seconds at speed 5. We lower the remains, add the reserved hake, the egg, parsley, garlic, salt and breadcrumbs. Mix a few seconds at speed 5.
We also make breadcrumbs in the thermomix, but when we have enough, and it can be kept in an airtight container perfectly.
We put in a bowl and we shape a mini hamburger. We go through flour, then through beaten egg and again through flour. Fry in plenty of oil and drain on a plate with absorbent paper.
We put the garlic in the glass and crush 6 seconds at speed 8.
We lower the remains and add the egg and salt. We beat 6 seconds at speed 5.
We put the beaker and without programming time, in speed 4 We are adding the oil in the lid, so that it falls little by little. In just over 2 and a half minutes we have the sauce ready.
We cut the rolls in half.
Spread with the false aioli.
We put the fish burger and a lettuce leaf
To finish we close with the other half of the bread.
