Mimosa cake

March 8: International Women's Day. And I must be a little weird because I don't like it, or at least I don't like how it's celebrated here in Italy. They call it the festa della donna and they celebrate it in a big way, with cakes like the one you see in the photo, with the traditional mimosa flowers and staying for the night (only women).

For me, today should be vindictive, among other things because there is a lot left for us to have something to celebrate. And more here, where the man papers-Woman they are even more marked and consented - in some cases by both parties - than in Spain.

And after venting, I go with the recipe. The cake is named after a plant with yellow flowers called mimosa (not the flower seen in the photo) and that today is for sale in all supermarkets, florists and even on the streets. It is nothing but a Genovese sponge cake that we empty and inside which we put a mixture made with cream and pastry cream. The remains of cake (what we get from that emptying) we crumble them and put them on the surface and sides of the cake.

      Hello Elsa, sorry for the mistake. It is already corrected.
      About the liquid pastry cream remaining ... didn't it thicken when cooling? It is always very thick ... did you use cornstarch?
