I have already commented many times that at home we are fans of lentils. Especially in winter there is no week that does not fall a good warm dish that lifts our spirits and takes away the cold. This time we have prepared the lentils with zucchini and other vegetables, in this way, they are more healthy that if we make them with meat.

Spoon dishes are economic and very easy to do. You just have to poach the vegetables a little and let them cook. lentils slowly. Nutritionally they are essential to have a healthy diet. In addition, in this case, it is a totally vegan, gluten-free and lactose-free recipe. So there is no excuse not to prepare it and enjoy its comforting flavor.

If during the week you are busy and no time to cook I recommend that you prepare these lentils with zucchini during the weekend. They last perfectly for a few days in the fridge. So when you get home you will only have to warm up and enjoy a dish like Grandma's.

      In principle, the cooking time of the lentils is the same. I would increase a couple of minutes in the poaching of the vegetables but the rest I would leave it the same.

      It depends a bit on the lentils you use. Pardin lentils cook very quickly, especially if you let them soak for a couple of hours.

      Keep in mind that these amounts are for 3 servings. If you use 400 grams you have to go for more.

      They are also stewed with vegetables and potatoes that make the recipe much richer.

      Serve a salad first and you will have a very healthy menu!

      I don't know how you normally do lentils but it seems to me that 560 g of water is not much, especially if we take into account that they contain potatoes and always thicken the broth.

      Yeah right. You can use frozen vegetables.

      It is true that frozen and fresh ones do not weigh the same, but the quantities are so small that there is hardly any difference. The same goes for the times. I would use the frozen vegetables but leave the recipe as is.
