Well, making an adaptation of the recipe of vegan lentils, today the children will enjoy some very complete lentils that, unbeknownst to them, will be made by a great variety of vegetables, vitamins and nutrients.
This recipe is also perfect to spend vegetable scraps that we have in the fridge, since we can customize the recipe to our liking and put those vegetables that we have or that we like the most.
On the other hand, in this case we will not use potatoes since we are going to complete these lentils with White rice, which will provide all the energy from carbohydrates.
And finally, and to give our lentils a more fun touch, we will accompany them with seasoned avocado, which has a very pleasant texture for children (if your little ones do not like it, removing it from the recipe is enough). And adults will love it, you will see what freshness it brings to the dish and what contrast of flavors and textures.
You can leave prepared with in advance the lentils and the rice, but in separate containers, to heat them and mix them just at the moment of serving them. However, avocado, I do not recommend preparing it too far in advance because it can oxidize very quickly. For example, you can prepare it 30 minutes before lunch, since the lemon will keep it for those minutes.
