Crystal cookies

Preparation

1. In our Thermomix glass we add the 125 g of soft butter, 1 egg, 1 teaspoon of vanilla extract and the 100 g of sugar. We program it 2 minutes at kneading speed.

2. Add the 250 g of wheat flour and program 2 minutes at kneading speed.

3. We take the dough out into a bowl and cover it with plastic wrap. We keep it in the fridge for 1 hour so that the dough becomes firm.

4. After the time has passed, lightly flour a table and place the dough on it. Knead it a little with your hands and proceed to stretch it with a rolling pin. We don't let it get too thin, it should be a little more than half a centimetre.

5. We make the cookies with the cookie cutter. First we make the big cookie and in the center we make another hole with a smaller cookie cutter. In this way, we will place a candy in the center.

6. Preheat the oven to 200º with heat from above and below. Prepare a baking tray with baking paper and place the biscuits with caramel in the centre.

7. When the oven is hot, place the tray in the centre of the oven. Bake for around 12 minutes. You will notice that they are done when they turn golden brown on the edges and the caramel has melted.

8. Finally, we let the cookies cool completely on the same tray, until the caramel hardens and we can remove them. We can now enjoy them.
