Today's are some crispy cookiesSimilar to grissini but in a sweet version. They contain limoncello and lemon zest, although the real star of the flavor is the buckwheat, which gives them a special and different touch.

The dough is prepared in just a few minutes in the Thermomix, and shaping them doesn't take long either. In fact, if you have children at homeThis is the perfect recipe to get them involved and entertained in the kitchen by forming sticks with their hands.

They turn out nice and crispy and are ideal to accompany a coffee or tea at any moment of the day.

Ingredients

  • 125 g of wheat flour
  • The peel of a lemon (only the yellow part)
  • 125 g of buckwheat flour
  • 50 g brown sugar
  • 30 g of sunflower oil
  • 80g milk
  • 35g limoncello
  • A pinch of baking soda

Music

  1. We put the wheat flour and lemon zest in the bowl. We program 15 seconds, speed 10.

  2. We add the buckwheat flour, cane sugar, sunflower oil, milk, limoncello, and bicarbonate of soda. We program 2 minutes, spike speed.

  3. We use the spatula to scrape down any food stuck to the sides and bottom of the bowl and program it again. 2 minutes, spike speed.

  4. We put it in a bowl and let it rest for about 15 minutes.

    We line a baking tray with baking paper.

     

  5. We take a small portion of dough, about 8-10 grams, and shape it into a stick with our hands. We place it on the baking tray. We do the same with the rest of the dough.

  6. Bake at 180°C (fan oven) for 15-18 minutes, until golden brown. Turn off the oven and leave the cookies inside for a few more minutes.

    And we have them ready.
