Cauliflower croquettes with diced Serrano ham

1. In our glass we add 1 liter of water and put it to heat, programming 5 minutes, 100º, speed 1.

2. Meanwhile we clean the cauliflower and cut it into florets. We put them in the water, with a little salt. We program 15 minutes, 100º, speed 1.

3. Once cooking is complete, drain the cauliflower in the basket or similar. Put it back in the glass and blend it, programming 1o seconds at speed 3,5.

4. We take out the cauliflower and clean the glass. In this step we make the bechamel: in the glass we add 30 g of onion and chop it finely, programming 5 seconds at speed 5.

5. Using a spatula, we lower the remains to the bottom of the glass. We add 50 g of butter and program 3 minutes, varoma temperature, speed 3,5. We add the flour and program 1 minute, 100º, speed 2 1/2

6. We add the two glasses of milk and program 10 seconds at speed 6. We add half of the ham cubes and program 7 minutes, varoma temperature, speed 4.

7. Once the bechamel is finished, add the cauliflower and the other half of the ham. 2 minutes, varoma temperature, speed 4.

8. We take the mixture out onto a tray, spread the mixture and let it cool.

   Once the bechamel has cooled, we can shape the croquettes. Coat them in flour or breadcrumbs, then coat them in beaten egg and finally in breadcrumbs.

9. We fry them in very hot oil and let them drain. We serve.
