Without a doubt, today's is a Sunday recipe: it is special but it is prepared while we have an aperitif. You'll see how good this one looks. salmon with tomato pesto.

The salmon is cooked in the oven, in about 10 minutes. The time is approximate because it will depend on how you like it (well done, rare...) and the thickness of your fillets.

Of course, we will bake it with a pesto that we will have prepared in Thermomix. In a few seconds we will have it ready.

We have served it with some slightly alternative baked potatoes, but you can bring it to the table with Steamed potatoes, with mashed potatoes or with traditional fries.

Ingredients

For the salmon with pesto:

4 salmon fillets (can be frozen if defrosted first)
A lemon (half for juice and the other half for decoration)

6 g fresh parsley
1 garlic clove
80 g dried tomatoes preserved in oil, without the liquid
10 g olive oil

For the potatoes:

600 g of potatoes (weight once shoveled)
80 g onion

If we want to serve the salmon with potatoes, we will start by peeling our potatoes and onion. We chop these ingredients as if they were for an omelette.
We fry them in plenty of oil. Once done, we remove them to a plate covered with absorbent paper.
We preheat the oven to 190º.
We put the four salmon fillets in a baking dish. We sprinkle them with a splash of lemon juice and season them with salt and pepper. We reserve.
We put the parsley and garlic clove in the glass. We program 3 seconds, speed 7.
Using the spatula, lower whatever remains on the sides of the glass and add the drained dried tomatoes. Also olive oil and pepper. We program 3 seconds, speed 7. We lower with the spatula what has remained on the walls and we reprogram 3 seconds, speed 7.
We put a spoonful of this pesto on each portion of salmon. We put one or two slices of lemon on them.
We bake at 190º for a few minutes (between 7 and 13). The time will depend on the size of the portions and how we like the salmon (well done, rare...).
We serve immediately, on a bed of potatoes.

Notes

If you want the potatoes to be tastier, when they are almost done, add a teaspoon of the dried tomato pesto. You will see how they improve.

To keep them warm, we can put the already fried potatoes in the oven. They will warm up while the salmon cooks.
