We are going to prepare a Apple pie with surprise inside: with cookies. The butter dough is already a delight. And the filling couldn't be more basic: jam, apple and cookies.
In an image that I leave you in the preparation section you can see the cookies that I have used. They are small and stuffed. Mine are from Ikea but, of course, you can use whatever you want.
You can have the cake freshly made, warm or even cold. If you serve it hot, you will enjoy it even more if you accompany it with a little vanilla ice cream.

Ingredients
For the mass:
- 100 g of sugar
- the skin of a lemon
- 120 g cold butter, cut into pieces
- 300 g flour
- 2 eggs
- A pinch of salt
For the filling:
- 150 g apricot jam
- 3 or 4 apples (depending on size)
- The juice of a lemon
- 6 cookies
Plus:
- An egg yolk
- A couple of tablespoons of sugar

We put the sugar and lemon peel (only the yellow part) in the glass. We program 15 seconds, speed 10.
We wait a few seconds before removing the lid. We use the spatula to lower whatever remains on the walls of the glass.
We add the butter in pieces, the flour, the eggs and the salt. We program 25 seconds, speed 5.
We take the dough out of the glass. In this case, we should remove the blades to make it easier. Helping ourselves with a little flour, we form a ball. We divide that ball in two, so that one portion is a little larger than the other (the large one will be the base). We wrap them in film and keep them in the refrigerator for about 30 minutes.
We prepare a removable mold of about 22 centimeters in diameter, greasing it if necessary.
We take out the largest portion of dough and spread it with a rolling pin, thinking that it has to cover our mold (the base and a little of the edges). We put that extended dough in the mold.
On that layer of dough we distribute the jam.
We peel and cut the apple into strips and put it in a bowl. Sprinkle the apple with lemon juice and mix well. The lemon will prevent the apple from rusting.
We put the apple pieces in the mold, on top of the jam.
Now we place the cookies. Mine are from Ikea but you can put whatever you want.
We spread the rest of the dough and cover the cake with it.
We beat the egg yolk and paint the surface of the cake with it. We sprinkle a little sugar.
We preheat the oven to 200º. When it is at that temperature, we put our cake in the oven and have it at 200º, 15 minutes. After that time, we lower the temperature to 180º and bake for 30 more minutes.
