Almond cookies with mandarin and chocolate

1. In our mixing bowl, add 300g of butter, 250g of sugar, and the teaspoon of vanilla extract. We program 2 minutes at speed 3,5.

2. We add half of the almond flour and the other half of the wheat flour. We program 2 minutes at kneading speed.

3. We add the rest of the ingredients and program 3 minutes at kneading speed.

4. We turn the dough out onto a floured surface. Roll it out to a thickness of 0,5 cm to 1 cm. Use a round cookie cutter or a glass to make the round cookies. They should have a diameter similar to the cut of the mandarin slice, as they will shrink during baking.

5. We cut the mandarins into thin slices and place them on top of the cookies. Sprinkle a little sugar on top. Prepare a baking sheet. Line it with baking paper and place the cookies on top.

6. Preheat the oven to 200°C (12°F), using top and bottom heat. Once it's hot, place the baking sheet in the center of the oven and bake for about XNUMX minutes, or until the edges are lightly golden.

7. We clean the glass and add the 150g of chopped fondant chocolate. We program 3 minutes, 90º at speed 1.

8. Once the cookies are ready, cover half of each cookie with fondant chocolate. Add a few chopped walnuts and let them cool.
