Chocolate volcano

The chocolate volcano is one of the desserts that I like to make the most. The first time I tried it was in a restaurant in Segovia (my favorite) called โ€œEl Narizotasโ€. When I opened the cake I was surprised to see the hot chocolate And the question was, how did they get the chocolate inside the cake?

More than a year ago, my presenter gave me the book "Pastry and pastry with Thermomixยฎ". When I looked at it and saw this recipe I immediately started to make it. It is amazing and delicious!, but above all it is so simple to do that it is worth it.

Some Saturday or Sunday, I make them with half the amounts so that I get 5 volcanoes and I surprise my daughters to have a snack with a ball of vanilla ice cream. He loves them!

I made him tonight, tomorrow I buy the silicone mold, it's great.

        Elena said

Delicious!. Marisa, I make them in aluminum muffin molds and they look great, too. I use both, silicone and aluminum. The important thing is that they are a bit wide and high.
      A greeting.

What it looks like! Do you know if it can be done in advance and baked just before serving? or if it can be heated in the microwave?

    regards

        Elena said

Hello Nuria, yes it can be done in advance and freeze them. I don't know for sure about the microwave because I always cook them in the oven, but I think it will work out. You will have to be aware that it is done on the outside and remove them. All the best.

    Hello Elena!!
I'm tempted to do it too, because it looks really good. Now I have a question! How is that chocolate melted inside, if you grind the pieces and melt them with the varoma at 80ยบ?
A little kiss from the Canary Islands, I love your page

        Elena said

Mercy, We crush the chocolate and make the dough as indicated in the recipe (but it is not made in the varoma). It is a dough with very little flour and a lot of chocolate and the trick is that when baking it as if they were muffins or muffins, we only leave it 7 minutes and it is just the time for it to be made on the outside and the dough inside is raw with a delicious and intense chocolate flavor. Try it and follow the steps in the recipe, you'll see how delicious it is. All the best.

    Elena,
A question about the oven: is it put with air or with heating elements?

    Thank you!!

        Elena said

Hi Iรฑigo, I have an old oven and it doesn't have the air option. I have been told that ovens that have air, if you put it when making sponge cake, it can dry out them. All the best.

Hello again! My mother, I'm going to surprise everyone with your recipes! I want to make the volcanoes, but I have to freeze them because we are going on a trip and the thermo cannot come ... I freeze them in the molds directly or the block dough? I can freeze the paper ones? You have to defrost them to put them in the oven? Thank you very much! You are like having the cook by your side all day, a luxury!

        Silvia said

Caty can freeze them without any problem in their individual molds, then you take them out of the freezer and I would leave them out for an hour and then in the oven, if you have to put them directly, put them in a few more minutes, you should see that they are well done on the outside.

        Elena said

Hello Marรญa Antonia, I am glad that you liked them. I put the recipe for Italian meringue: in the glass you add 150 gr. of sugar and 50 gr. of water, programs 10 min., temp. varoma and vel. 2. Remove it from the glass and reserve. Without washing the glass, place the butterfly and add 3 egg whites, 2-3 drops of lemon juice and a pinch of salt. Program 3 min., Speed. 3 1/2. With the machine running and through the nozzle, we add the reserved and hot syrup (if it had cooled, we heat it for 30 seconds in the microwave), adding it very little by little using a very fine thread. After this time, we program 6 min., At speed. 3 1/2.
      Greetings and Happy Holidays!.

Hi! I'm looking forward to preparing the recipe, since I promised it to my 9 and 11-year-old cousins, but the molds I have are Teflon-type muffins, and they are not very high .. is it going to come out anyway? or will I not be able to do them?

        Elena said

Hi Annita, if they are for muffins they are high enough, those for muffins are shorter. I make them in disposable aluminum muffin molds and they look perfect. I hope your cousins โ€‹โ€‹like it. You will tell me. All the best.

     Brenda said

Hello! I loved the recipe, thank you very much! I already did it and I want to do it again but this time there are few of us. What do I do to keep them from getting cold? When they cool down, it loses its "magic" so to speak ... When you put it in the microwave, will it look like it just came out of the oven?
Or better USE the mixture for those that are left and the rest will be kept in the refrigerator without problems?

    THANK YOU

        Elena said

Hello Brenda, you only have to bake the ones you are going to eat, you can freeze the rest by pouring the dough into the molds and freezing them. So you have them ready for another occasion. Greetings and I'm glad you liked it.

     carmen said

Hello Elena, I have tried 3 times the volcanoes and they have not come out, only 2 of them came out well, I think the secret is to get the point at the oven temperature and the time, there are several versions about this, can you tell me what temperature do you put?

        Elena said

Hello Carmen, I put it at 240ยบ and only 7 minutes. If they do too much, your oven is stronger and you can set it to 210ยบ for 6-7 minutes. I hope they come out because they are delicious. All the best.

Good afternoon!! I have finally seen the ideal day to make the volcanoes, at a dinner with friends ... my husband says that I am a kamikaze because I make the recipes without trying before, but it is so difficult for them to go wrong !! All delighted !! One question ... have you tried making them with white chocolate? Greetings and happy summer.

        Elena said

I'm very glad you liked them, Virginia! The truth is that it is a dessert with sure success. I have not tried them with white chocolate yet, but I have it pending. I'll tell you about it. Greetings and happy summer.

I did the volcanoes but the chocolate didn't melt inside. I did it with muffin molds (made of paper). They were good but I don't get it. Even if they cool down, does the chocolate still come out? or to serve you would have to warm them a little?

        Elena said

Hello Raqueรฑ, then you have to put less oven time. In mine it is just 7 minutes, if you put this time and it is not melted it will be because you have to put 5 or 5 1/2 minutes in your oven. The delicious thing is to eat them as they come out or warm, accompanied by a scoop of ice cream. This is how the chocolate inside is richer. All the best.

          Rachel said

Well, I'll try again, to see if I can get the chocolate to melt !!!! Thanks.

          maribel said

The volcano, once the dough is made, is dumped into the molds and put in the refrigerator, the oven is left on and a few minutes before dessert time they put it in it and that's it. I have kept them in the fridge which I have not put in the oven for up to 3 days and when I have done it they were perfect. a greeting

I have made the volcanoes with white chocolate but I have had very little done and the chocolate is too liquid, I would like to know why they do not look like fondant chocolate, if you think I would have to make more flour, I await your response and send you a greeting.

     Sara said

    Hi how are things?
One question: is fondant chocolate dark chocolate?
It's that I'm interested in making the recipe but I can't handle the taste of dark chocolate, I'm more of the "with milk"
Can it be made with some kind of milk chocolate? With which?

    Thank you in advance!
    Greetings to the forum

        Mayra Fernandez Joglar said

      Hi Sara:

fondant chocolate is the icing chocolate. I love black but I really like Nestle's milk chocolate the one that says Desserts. It has brown paper and red letters.

      Kisses!

    Good,

I have read all or most of the comments you have made regarding the recipe, but I still have a dua left. I'm going to make dessert for Sunday and we're going to eat it at my mother's house. If I bake them at home just before I go out, will the melted chocolate last for lunch? Please answer me because I don't want to look bad.
    Thank you very much
    Nuria

        Irene Thermorecipes said

Hello Nuria, I think it is best if you bake it but one minute less than what we put in the recipe, in this way you can give them a heat in the microwave before drinking. Lucky!

Hello, I want to make the chocolate volcanoes for the end of the year dinner, but I would have to make the dough at home and then take it to my parents' house and put it in the oven there.

My question is if the dough lasts 3 or 4 hours before baking in the molds or do I have to freeze it so that it holds well and the volcanoes come out.

I need your help urgently !!! Thank you very much and happy new year.

        Irene Thermorecipes said

Hello Ainhoa, if you could take it perfectly in the molds, it holds up very well for 3 or 4 hours. It is not necessary to freeze it. Lucky!

    Hello,
I would like to make this recipe in the morning, leaving the dough in the molds, and put it in the oven at noon right after the meal. At that time, it is better to leave the molds with the dough in the fridge, or at room temperature is it okay? or do you have to freeze it, even if it's only for half a day? Thank you!!! I love your recipes and I have already made a few !!!

     LOLI GARCIA said

Hello, I have done the volcanoes but the chocolate has not been melted inside
What will it be due to the temperature of the oven? or that I have left it in the oven for a long time?

        Irene Thermorecipes said

Indeed Loli, each oven is different and here we give an indication, but of course, it depends on your ovens. Try next time to put less time. The trick is to make it on the outside and stay liquid on the inside.

HELLO! I want to make this recipe today but I have a question: The oven at 240ยบC but above and below or only below? Needed

        Irene Thermorecipes said

Hi Luludaki, this depends on your oven. For example, mine has a fan and I put it only with the fan, but up and down. Keep in mind that we need it to be done very quickly on the outside and remain undone on the inside. Lucky!

My question comes in the eggsโ€ฆ HOW IS THE PARTITION DONE ???
How many eggs and yolks do I put ???
    Thank you!!

        Irene Arcas said

Hi Maria, my advice is to divide each quantity by 3, so that you use a whole egg. You can make them bigger to make only 2 or if you have some left over and you don't want to eat it soon, when it cools down, I recommend that you freeze it and when you want to drink it, put it directly in the oven or microwave for a few minutes until it is ready. squishy inside. You will tell us! Happy Valentine's Day ๐Ÿ˜‰
