Ingredients

Salad

1000 g of water
1 teaspoon of salt
3 large potatoes with skin, halved and well washed
1 carrot, peeled
2 whole eggs, well washed
100 g of cooked turkey breast
1 pimkie, fuji, or granny smith apple
4 tablespoons pickle broth
1 large sweet and sour pickle

Avocado, coriander and lime mayonnaise

200 g mayonnaise
1 ripe avocado
a handful of coriander
juice of 1/2 lime
1/2 bucket of water

Salad

We put the water with a little salt and the basket in the thermomix. Inside the basket we put the potatoes and eggs and close the glass. In the varoma container we put the carrots.
We program 45 minutes, varoma temperature, speed 2. We check that they are already cooked by pricking them with a knife.
Half the time we remove the eggs from the basket and the carrots (we check that they are already tender) and reserve.
When the potatoes have cooled, peel and chop them. We do the same with carrots. We place in a bowl. We add salt to taste.
We chop the pickles and add them to the salad. We peel the eggs and cut in half. We remove the yolk and reserve it, and chop the white and add to the salad.
We put the apple without skin or core in the glass and crush 4 seconds, speed 5. We add to the salad.
Add the pickle broth to the salad and stir well. Now we add the turkey cubes. Let it rest in the fridge for at least 4 hours.
Avocado mayonnaise

We put the coriander in the glass and program 5 seconds, speed 7. We lower the remains of the lid and walls towards the blades.
Add the rest of the ingredients and mix 10 seconds, speed 6.
We mix the salad with the mayonnaise. We place the salad where we are going to present it and sprinkle with the egg yolk and a little coriander.
