Ingredients

• 3 boiled eggs
• 1 tablespoon Dijon mustard
• 2 tablespoons mayonnaise
• 1 teaspoon of lemon juice
• salt to taste
• pepper to taste
• 6 anchovies in vinegar
• 6 slices of bread (baguette or rustic, toasted)
• Extra virgin olive oil
• Parsley for garnish

Preparation

1. We put the peeled boiled eggs in the Thermomix glass and blend them. 2 seconds, speed 4 so that they remain in small pieces.

    

2. We lower the remains of the lid and walls and add the mustard, mayonnaise, lemon juice, salt and pepper and we mix 10 seconds, speed 3 until you get a creamy mixture.

3. Spread the slices of bread with this egg and mustard cream. Place a drained anchovy on top. Add a splash of olive oil and chopped parsley (if the anchovies don't already have it).
