Today's recipe is simple and comforting. It's made with vegetable broth and a touch of aromatic celeryThe special thing is in the presentation: we will serve it with the classic Serrano ham and with a little bit of creamy gorgonzola.

Easy and delicious cream of mushroom soup with vegetable broth, celery, Serrano ham, and creamy Gorgonzola. A comforting recipe perfect for any time of year.

Ingredients

For the cream:

  • 60 g celery (the most tender leaves and stalks)
  • 20 butter g
  • 500g fresh mushrooms, sliced
  • A few fresh rosemary leaves, washed
  • 100 g of potato
  • 400 g vegetable (or meat) broth
  • Sal Island
  • Pepper

For the surface:

  • Serrano ham
  • A little Gorgonzola cheese

Music

  1. We put the celery in the glass, in pieces. We program 5 seconds, speed 5. We lower with the spatula what has remained on the walls of the glass.

  2. We add the butter and program 3 minutes, 120º, speed 1.

  3. We add 500 g of mushrooms and the rosemary leaves. We program 3 minutes, 100º, speed 2.

  4. Now add the diced potato, the broth, salt, and pepper. Place the basket on the lid (without the measuring cup) and set the time. 30 minutes, 100º, left turn, speed 1.

  5. We remove the basket from the lid, fit the beaker and grind for 30 seconds in progressive speed 7-10.

  6. We serve the cream in small bowls. Top with a teaspoon of gorgonzola and a few strips of Serrano ham.

Notes

To achieve a crispy touch, you can sauté the Serrano ham strips in a pan just before serving the cream.
